Honeybees
Honeybees are an essential part of any healthy farm ecosystem, and we have seen this first-hand in our farm journey.
Without honeybees and native pollinators, humans would lose a significant portion of their food source. We owe a lot of gratitude to the magical honeybee, and it’s imperative that we do our best to ensure their survival despite the many challenges faced in the modern world—pesticide use, climate change, over-grazing, mono-cropping and varroa mites.
Aside from pollination, honeybees also have the unique ability to produce honey, which, in its raw form, has enormous health and healing benefits for humans, in addition to being absolutely delicious.
From mid-summer through fall, we hand-harvest pure, raw Hudson Valley honey from our farm apiary, preserving all the goodness and health benefits the bees and nature intended.

BERRIES, HERBS & SPICES
In a nod to Nordic tastes and traditions—and to Jennifer’s proud Danish roots—we grow seasonal specialty berries, harvested daily, from early summer through fall.
In the ever-growing symphony of synchronized, seasonal berry production, we harvest small batches of multi-variety ruby red strawberries, Nanking cherries, a rainbow of currants, mulberries, blueberries, gooseberries, elderberries, raspberries, sea berries, cherry plums and roseship, every spring through fall for our CSA and Farm Club members.
All of our berry & herb growing is rooted in good soil, natural fertilizers and organic soil amendments, and never, ever sprayed with toxic pesticides or herbicides.
MUSHROOMS
One towering, tumbling poplar tree crashed down at our feet 6 years ago, and that led us to the magical world of mushroom cultivation. Ever since, we’ve been utilizing our natural resources to cultivate mushrooms on logs of freshly fallen trees.
Mushroom cultivation in the wild remains one of the most sustainable foraged foods known to man. Using the resources of plug spawn from our friends at North Spore in Maine, we have created a shady, pine-strewn orchard of mushrooms, fruiting summer through fall, including Shiitake, a colorful parade of Oysters, Japanese Nameko and glorious giant Wine Caps. With just fresh logs from our farm, plug spawn, wood chips, and natural wax from our beehives, we’re able to grow masses of gorgeous meaty mushrooms each fruiting season for our local markets.
